Apple, Carrot & Walnut Muffins Muffins are part of the family of Quick Breads because they should be mixed and placed in the oven all in very little time and usually with ingredients you already have on hand.
2 large apples First preheat the oven to 325 and butter a one-dozen muffin tin well. Peel and grate apples and carrot and toss them with the sugar in one bowl. In another bowl, whisk together the oil, egg and vanilla. In the last bowl stir together the flour, baking powder, cinnamon and salt. On a cutting board, rough chop the walnuts. Combine the oil mix with the apple mix then mix this with the dry ingredients. Toss just until all is moist. It'll be thick. Stir in the walnuts and divide the batter among the muffin tins. Bake for 25-30 minutes or until a toothpick poked into the center of a muffin comes out clean. Comments: steve@pulpkitchen.com
