Pickled Salom

2 salmon fillets, chopped into 1" cubes
1 cup of vinegar
2 cups of water
1 cup of sugar
8 Roma tomatoes, sliced in half
1/2 a cup of ketchup
Slices of bermuda onion
Chopped parsley and lemon to garnish
Pickling spices:
be creative - you can choose from a plethora of spices. We picked the following combination:
ginger
garlic
allspice
cloves
mustard seed
bay leaf
crushed red pepper
coriander
cumin
In a large skillet add water, vinegar, tomatoes, ketchup and sugar - let it come to a boil.
In a few minutes add your pickling spices - let it boil for five minutes. Chop the salmon fillets into bite size pieces and add to the mixture. Cook on medium heat with a cover for at least 7 minutes.
Serve in nice-sized bowl with lemon in the broth and onion on the side along with parsley and our yummy
