Easy recipe of a great cookie right here. I've adapted this from a recipe that's been around for decades. I upped the ginger and added nutmeg, allspice and black pepper to invigorate them. The spices intensify the longer they sit in the cookie jar.
2/3 cup vegetable oil Mix oil and sugar thoroughly with electric mixer. Add egg and mix well. Pour in molasses. Sift and add dry ingredients until incorporated. Roll teaspoonful of dough into ball, drop into sugar to coat. Place on ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 15 minutes. Transfer to wire rack and cool completely. Store in jars, containers, Tupperware. These store well, last long and improve with age. Makes several dozens of cookies. Comments: steve@pulpkitchen.com
